This cut is the most tender part of the beef, and highly sought after as the best cut available. It must not be over-cooked! If not cut into steaks, this is the Tenderloin Roast. Our filet this year has been cut into pieces about 4" thick. Using a sharp knife, I've further cut them into 2" thick medallions for the steaks that our family has enjoyed.
